Start iTunes

Start iTunes and select Edit, Preferences

In Preferences, change from iTunes' default AAC Encoder to the MP3 Encoder:

1. Choose Advanced
2. Importing
3. Import Using MP3 Encoder

Now we are in the heart of the matter, and you have to make a few choices. The two items you want to work with are the Stereo Bit Rate and the Sample Rate, both of which affect sound quality and file size.
